Our first In-house charcuterie & local cheese share pick up from Formaggio was a few weeks a go. Here is a roundup of what we got as well as a few pictures of how it was used.

In-House Charcuterie:

Formaggio Franks - Beef/Pork blend hot dogs

Chicken Liver Mousse Pot - chicken liver mousse, plugra butter, and duck fat capped with a Madeira aspic.

Lambcetta - house made pancetta made from lamb saddle flap, the equivalent of ‘lamb belly’

Crepinettes - pork sausage seasoned with fennel and black pepper and wrapped in caul fat.

Local Cheese’s:

Bonne Bouche (Websterville, VT) - Goat’s Milk, ashed rind, slightly stinky and very creamy.

Maggie’s round (Williamstown, MA) - Cow’s Milk, toma-style cheese, aged 60 days. Nice sharpness

Ascutney Mountain (Hartland, VT) - Cow’s Milk, alpine-style swiss type cheese, nutty taste.

Middlebury Blue (Salisbury, VT) - Cow’s Milk, Blue cheese - creamy and dense without being too tangy.
